Exploring Kawkaba with Al Wadi Al Akhdar

Al Wadi Al Akhdar is taking us on tours of lesser-known green destinations around Lebanon. 

Our first and second destinations, Jisr El Aarous and Ammiq, have paved a way to our next fascinating location – Kawkaba.

Located in the Hasbaya District of the Nabatieh Governorate, Kawkaba is not only rich in agriculture — thanks to its various springs and streams — it is also rich in history.

Hiking enthusiasts can definitely put Kawkaba on their list of places to explore. Trails expose ancient sites dating back to the Canaanites and Phoenicians, old natural caves and beautiful landscapes.

Kammounieh

Kawkaba is also known for its kammounieh, which is a southern specialty. The vegan pâté is made with unique spices that is special to every household.

Ingredients

Kammounieh mix:

1/4 cup of cumin

1 tbsp of hot pepper

1 tbsp of marjoram

1 tbsp of basil

1 tsp of mint (fresh or dried)

1 tsp of ground cloves

1 tsp of ground nutmeg

1 tsp of rose petals

1 tsp of cinnamon

The mixture

1 cup of fine bulgur

1/2 of the kammounieh mix

3 tbsp of dried onion

1/2 cup of Al Wadi Al Akhdar tomato paste

1 tbsp of hot red pepper paste

1/2 cup of Al Wadi Al Akhdar olive oil

Preparation

  1.  Mix the red pepper with tomato paste in two cups of boiling water.
  2. Add the bulgur and onion and let it sit.
  3. Drain the excess water and mix the bulgur with the spices and olive oil until it forms a thick patty.
  4. Garnish with herbs and olive oil.
  5. Serve it as a side dish.
